Sprout’s Mac Ain’t Cheese

Let’s face it, Mac and Cheese is a kid and family favorite and understandably so. It’s creamy, scoopable, easy-to-chew, and downright delicious! Our new and improved Mac Ain’t Cheese is everything you and your kid’s love but is also packed full of nutrients that are critical for your child. Try this delicious dish and watch your kids dig in!

Yield: ~600ml of sauce; enough for 500g dry pasta; serves 4-6 people.


  • 25g dry white beans, sprouted over 3-4 days (yields approximately 75g cooked white beans); without the cooking liquid


  • 150g fresh cauliflower
  • 1 small white potato, peeled and cubed (~50g, preferably the firm cooking kind)
  • 1 medium garlic clove (~3g)
  • 1 medium onion (~150g)
  • 30g cashew nuts
  • 1 small carrot (~40g)
  • A piece of sweet potato (red variety) (~40g)
  • 1 Tsp organic tomato paste (~5g)
  • ½ Tbsp tahini (~8g)
  • 1 Tbsp extra-virgin, cold-pressed canola oil (~15g)
  • 1 Tsp organic apple cider vinegar (~5g)
  • ½ Tsp organic yellow mustard (~2.5g)
  • ½ Tbsp organic miso paste (~7g)
  • ½ Tsp organic sweet paprika powder (~1g)
  • A pinch of organic black pepper powder (~0.2g)
  • ¼ Tsp organic turmeric (~0.5g)
  • 1 Tbsp nutritional yeast (~7g)
  • ½ Tbsp vegetable stock powder (~8g)
  • ~ 2.5 cups of water


  1. In a food processor, chop garlic and onions separately and set aside for 15min for allicin development
  2. In a food processor, chop cauliflower and set aside for ~40min for sulforaphane development
  3. In a food processor, finely chop carrots and sweet potatoes, add half of the chopped onions to the mix and set aside 
  4. In a small pot, add the remaining onion, chopped garlic, cashew nuts and white potato; add 1.5 cups of water; bring to a boil and let it simmer for 15min; add the cauliflower and continue to cook for another 10min until all the ingredients are tender
  5. In a nonstick skillet (preferably with a lid), add ½ tablespoon of canola oil, chopped vegetables from step 3 (onion, carrot, sweet potatoes), and tomato paste. Saute over medium heat until browned; add ~½ cup of water, close the lid and let it simmer on low heat until all the vegetables are very soft
  6. Transfer cooked vegetables from Step 4 and 5 into a blender; add all the remaining ingredients and blend at the maximum setting for 2-3min
  7. Adjust thickness with additional water (add a tablespoon at a time to avoid runniness)
  8. Adjust salt with iodized salt
